On a highland trail, the place to stop and rest when weary is known as a Bothie. Torbreck have been tinkering away at a sweet wine since 2001, the idea was always to construct something that's just a little bit different. This sweeter style of Frontignac exhibits lifted fruit aromatics, lifted perfumes of rosewater and honeydew melon, geraniums and lime, very characteristic of it's Barossa provenance. Bothie is a very versatile wine that can be enjoyed either at the start of a meal or nicely chilled at the end, alongside fresh fruits and cheese, ice creams or sorbet.

A wickedly decadent indulgence, an extravagant gratification for the hedonist within the most wayward Barossa enthusiast, here are Torbreck at their nefarious best. Heinously high in alcohol and not for the feint of heart, a single unique parcel is called upon, only ever in the finest vintage years, hand picked off a precious, sharefarmed block at Moppa. Treated to a meticulous old world vinification techniques, Highland Fling is arrested mid way through fermentation with a fortification of Torbreck brandy, lifting the intensity of palate and infusing evocative perfumes.

A bolder style of sparkling Rose, offering some serious complexity and varietal trademarks, bound together by a a semi-dry, and finely beaded creamy mouthfeel. Tigress are fresh and crisp, early drinking wines that aim to present the unique regionality of Tasmania. Fruit for the Tigress Rose is sourced from vineyards across the island, taking advantage of diverse viticultural conditions. A rich pink wine that's predominantly Pinot Noir, the Bay of Fires displays complex aged characters to complement its fine tannin structure.

The retinue of rich soils and microclimates along the length and breadth of the Tamar and Coal Rivers yield superlative Pinot Noir and Chardonnay grapes. The Tigress beams with lifted, aromatic fresh peach and nectarine characters, a golden, buttery mousse and generous structure with vibrant citrus at the finish. The finest parcels of fruit have been brought together, treated to Methode Traditionelle, embellished by a small amount of reserve wine and finished with a tirage of liqueur doseage to achieve a well defined sparkling wine with vigour and panache.

A hand made Methode Traditionelle from parcels planted to superior terroirs on the slow ripening altitudes of Valley Eden. Vineyards were specially selected to grow the perfect fruit for this exquisite style of sparkling Pinot Chardonnay. Vinsanto is also known as Vino Santo or sacred wine, so named for it's use by clergy and congregation during the holy mass. It has been vinified in Tuscany since at least medieval times and Antinori have been making it for centuries. A pious cepage of Trebbiano and Malvasia sourced exclusively off vines grown to three Antinori estates in Chianti Classico.

Tache is a French word meaning stained, the rare method used by Taltarni to fashion their sparkling Rose. A significant emptor of the Cote des Blancs, home to the world's finest Chardonnay vineyards, the noble House of Taitinger is one of Champagne's most ancient and most esteemed. Aged in bottle on sediment lees to infuse distinctive Taittinger opulence, it is eventually topped up with the traditional liqueur doseage to impart the House's distinctive full body and smoothness. An equal assemblage de cepages of Chardonnay to Pinot Noir, Prélude Grands Crus is crafted from fruit grown to the highest classified vineyards in all Champagne.

Created to commemorate Thibaud IV Comte de Champagne, the aristocrat who planted the original Chardonnay vines in France circa 13th Century. First vintaged in 1952, it is produced exclusively from the delicate first pressing of the most extravagantly valued Chardonnay grapes, grown to perfection within the ancient communes of the elite Cote des Blancs. Taittinger is still crafted under the historic cellars of the 13th Century Abbey Saint-Nicaise, in the heart of Champagne in Reims.

Home to some of Champagne's finest Chardonnay vineyards, Taittinger uniquely blends a relatively higher proportion of 40% Chardonnay to the standard Cuvee. Taittinger Brut Reserve is an assemblage de cepages of forty ancient vineyards around the Champagne apellation, matured to perfection at the chais de Taittinger. Brut Millésimé is an assemblage of exclusively first press wines, an equivalence of Chardonnay from Grands Crus in the Cote des Blancs, Pinot Noir from Grands Crus on the Montagne de Reims and Valley Marne. A generous mousse of greengage and mirabelle plum, dominated by boulangerie and candied fruit, honeyed notes and complex yeasty autolysis.

Mornington brings something different to the Italianate Moscato, climactically it is blessed with a real advantage. In Australia, there are fewer traditional stylistic conventions to the handling of Moscato, therefore flavoursome and refreshing versions can be crafted which trump the Europeans. T'Gallant fashions their Moscato to display the virtues of simple, high quality winemaking, picking the grapes at a moderate alcohol level, gentlly pressing and not messing about with the wine too much, practices which are all central to the T'Gallant philosophy.

One reason Brian Stonier founded his winery and planted vineyards was his love of Champagne. He originally established his now famous Pinot Noir vines to craft a luxury sparkling wine. Stonier Sparkling articulates the cool and maritime growing conditions of the Stonier vineyards at Mornington. Exhibiting heady aromatics, heightened flavour profiles of nuts and baked yeasts, with a fine effervescence, Cuvee Stonier expresses fine masculine fruit, in particular from the major component of Pinot Noir grown to cooler sites.

The pictuesque Plunkett Fowles vineyards occupy choice sites throughout the rolling plateaux at the heights of the Strathbogie Ranges. The quality of Pinot Noir and Chardonnay grown here are clearly within the Ivy League of the finest Victorian fruit. An assemblage of roughly equaly proportions Chardonnay and Pinot Noir. The white grapes share their origin equally between a variety of blocks within the Plunkett Fowles Upton Run and Whitegate Vineyards. The black grapes are drawn exclusively from the Trevor's Block at Whitegate.

The irrepressible Warburn Estate has been at it again, crafting a divinely light-on the alcohol, yet immensely flavourful, slightly spritzy and teasingly fruity wine from Muscat Gordo Blanco grapes. Warburn Estate's outstanding success has been achieved through it's expertise in blending traditional winemaking skills, innovative techniques and plain, simple knowledge of what tastes good. Crunchy flavours and an spritzy zing around the palate, so easy to enjoy, it just goes down a treat with pear n rocquet salads or cheesey nibbles. Yum.

Prolific winemaker and wine show judge Stephen John honed his skills for many years at Seppelts, before joining Wolf Blass as Chief White Winemaker, then General Manager of Operations at Quelltaler. A blend of Semillon and Chardonnay is the Blanc de Blanc from vineyards around Watervale, picked early in the season to capture the freshness and elegance. An aperitif style displaying elegant structure, balanced acid and lovely soft integrated flavours.

Established 1985, the Step Rd wineworks are fortuitously positioned to collate harvests of the finest grapes from local vineyards at Langhorne Creek and splendid sites within Adelaide Hills. Sparkling wines are something that Step Rd do particularly well.
